Biscuits

2 cups Flour
1 tbsp Baking Powder
1 tsp Salt

1/4 cup Shortening
3/4 cup Milk

Preheat oven to 450°F.
In a large bowl, mix flour, baking powder, and salt.
With pastry cutter, cut in shortening until mixture resembles coarse crumbs.
Stir in Milk. Quickly mix just until mixture forms soft dough that leaves side of bowl.
Turn dough onto lightly floured surface. Knead 6 to 8 strokes thoroughly.
With floured rolling pin, roll out dough: 1/2 inch thick for high, fluffy biscuits, 1/2 inch thick for thin, crusty ones.
With floured knife, cut biscuits to desired size. Place biscuits on ungreased cookie sheet with flipper, 1 inch apart for crusty biscuits, nearly touching for soft-sided ones.
Press trimmings together. Roll and cut as above.
Bake 12 - 15 minutes until golden.
